If you're looking for an Indian cookbook, particularly an Indian vegetarian cookbook of taste excellence, Chef Zubin D'Souza has written your vegetarian Indian cookbook.
Not your ordinary cookbook; not your ordinary chef! Chef Zubin is a graduate of India's OCLD, a program more difficult to get into than Harvard Law and more difficult to get through than Top Chef. Of 22,000 applicants to Zubin's group, fifteen were accepted and only seven (Zubin was one) graduated!
Chef Zubin is a classic, and the book is a classic. Today's Internet is not your grandfather's postal mail. Talk with Chef Zubin. Talk directly with the chef, one on one—right now. Visit Chef Zubin's blog by clicking "Talk With Chef Zubin" in the list at the left, or send an email to Chef Zubin at hellochef@chefzubin.com
When asked in his blog why mustard oil is mentioned so often in the book (it appears in 23 recipes), chef Zubin responded, "Mustard oil is the cooking medium of choice for the inhabitants of the states that lie toward the East and North East of the subcontinent. It is a sharp, pungent oil with a phosphorus like odour. It is highly regarded in Ayurveda, the ancient Indian healing science and is considered one of the healthiest cooking mediums available.
Why does it appear so often in the book? Well, because all the recipes are authentic, traditional Indian vegetarian fare and that is what you would use to get it as close to the original taste as possible."
